WINE TASTING NOTES
  • Sight – Intense yellow colour and fine bubbles.
  • Nose – Floral aromas with baked ripe apple, complemented by subtle notes of dried fruit and dried herbs.
  • Palate – Smooth and fresh on the palate with integrated and persistent bubbles. White fruit and almonds flavours, recalling the perceived aromas.

VINTAGE 2018: An extremely rainy Spring increased the vines’ unique vigor leading to slightly higher yields than in recent years. Thanks to our mildew-free vineyards, the warm, dry conditions in July helped accelerate ripening and delivered exceptionally healthy grapes for base-wine production. Heavy rains and mild temperatures from mid-August slowed and unevened maturation, so careful sorting was required both in the vineyard and in the cellar. Fortunately, drier weather and brighter skies in mid-September allowed the fruit to reach full maturity. The result: wonderfully aromatic white wines with lower alcohol, and fresh, lightly structured reds. Overall, a vintage with a distinctly Atlantic profile rather than a Mediterranean one.
 

Winemaking

Ancestral style cava made with the Traditional method and without added sulfites. Crafted from organically grown Pansa Blanca, meticulously selected in the vineyard and in the winery to ensure impeccable quality. The free-run juice undergoes a single fermentation that finishes in the bottle, followed by 20 months of ageing on the lees. After disgorgement, it continues with a further 53 months of bottle ageing. Released without dosage and with no sulfites or any other additives at any stage of the process, preserving the wine’s purity and authenticity and allowing the ripe fruit character and the finesse of the bubbles to develop naturally.
