Old vintages of Exeo Paraje Calificado Vallcirera.

Crafted from Pansa Blanca and Chardonnay organic grapes grown in Vallcirera Paraje (now Paraje Calificado). The essence of each vintage is expressed through fermentation in French Allier oak barrels (2nd and 3 years aged barrels), followed by the traditional method and ageing on lees – under natural cork – for a minimum of 208 months.
Each bottle is hand-disgorged and released with the disgorgement date and precise ageing months indicated. Produced only in exceptional vintages.

WINE TASTING NOTES

Sight – Attractive intense golden colour with slight green reflections.
Nose – Intense and floral. Aromas of frosty white fruit, notes of white flower, honey and quince, recuperating the toasted characteristics of the fermentation and the ageing in barrel.
Palate – In the mouth it is creamy, unctuous and mineral. Cava with well-marked acidity and extraordinary aromatic complexity. Deep and delicate ageing aromas where floral and white fruits notes comes together with elegant toasted nuances. Integrated effervescence and long and persistent aftertaste.

VINTAGE 2007: Very dry summer with unusually cool temperatures. The strong temperature contrast between day and night led to an early, healthy, and short harvest. Highly aromatic with nearly ideal ripening, resulting in wines of remarkable structure.
